I struggled for a while with what to do with all of our bread heels. I found two solutions -- let me know if you have some too!
1) French Toast -- I pull a few from the freezer, dip them in my egg batter and use them to make french toast. With all of that syrup and powdered sugar, you don't even notice that you're eating a heel. :)
2) Croutons -- cut bread into cubes (it can still be frozen), put in a small baking pan and toss with olive oil and italian seasoning and broil on low for a few minutes. Be sure to keep an eye on the croutons as they can burn pretty easily.
