Veggie Stock

I recently learned of a *super* easy way to make vegetable broth!  Start a ziplock bag or container in your freezer for any veggie scraps (onion peels, carrot tops/peels, celery leaves, etc.).  When the bag gets full, put the ingredients in your crockpot, cover the scraps with water, and turn it on low for 8 hours.  Strain the concoction (keeping the liquid!), pour into freezer bags and freeze flat.  Make sure you leave some room for expansion!!  Then store upright (stacked next to one another like books on a bookshelf) in your freezer.  Thaw and make some yummy soup!
